INGREDIENTS:
360 g of Free go quick-frozen Gluten-free apple and cinnamon croquettes
5 dl of edible oil
5 dkg of icing sugar
50 g of sugar
25 g of gluten-free flour
5 pcs of egg yolks
650 ml of milk
1 piece of vanilla pod
Preparation:
Mix the sugar and the gluten-free flour, then add about 150 ml of milk and mix until lump-free. Add the scraped-out inside of the vanilla pod and the pod itself (this is removed at the end), stir in the egg yolks and the remaining milk, and thicken over a medium heat, stirring constantly, then once it has cooled to lukewarm, put it in the fridge until needed.
Fry the Free go croquettes, taken out of the freezer, in plenty of hot oil at 175-180 °C for 3-4 minutes, turning constantly, until golden and crispy. Then remove and drain off the oil on paper towels.
Place the croquettes on a plate and sprinkle with icing sugar to taste, serve with the cooled, previously prepared vanilla custard.
